Orange Cranberry Crumble Muffins

Ingredients:

  • 1 cup all-purpose flour 
  • 1 cup whole-wheat flour 
  • 1 teaspoon kosher salt 
  • 2 teaspoons baking powder 
  • ½ teaspoon ground cinnamon 
  • ½ cup granulated sugar 
  • ¼ cup unsalted butter, melted
  • 1 large egg, beaten 
  • 2 teaspoons vanilla extract 
  • ¼ cup nonfat Greek yogurt 
  • ¾ cup Tropicana Pure Premium® 100% orange juice
  • 1 cup fresh or frozen whole cranberries

Topping:

  • ¼ cup unsalted butter, melted
  • ¼ cup light brown sugar 
  • ¼ cup rolled oats 
  • ½ cup all-purpose flour 
  • 1/8 teaspoon kosher salt

Icing:

  • ½ cup confectioners’ sugar 
  • 2 tbsp Tropicana Pure Premium® 100% orange juice

Directions:

  1. Preheat the oven to 375F. Line a 12-cup muffin pan with paper liners. 
  2. In a large bowl whisk all-purpose and whole-wheat flours, salt, baking powder, and cinnamon. To the same bowl add sugar, melted butter, egg, vanilla extract, Greek yogurt, and orange juice. Using a spatula or spoon, mix well to combine.  
  3. Fold in cranberries. Scoop batter into muffin cups and set aside while you prepare the topping.  
  4. For the topping: mix melted butter, brown sugar, oats, flour and salt. Mix gently until the mixture resembles wet sand. Sprinkle evenly over the muffins.
  5. Bake for 20 to 22 minutes or until golden and a toothpick or cake tester comes out clean from the center. Allow to cool for 10 minutes and then transfer to a wire rack to cool completely before topping with glaze.  
  6. For the glaze: place confectioner’s sugar in a small bowl, stir in orange juice 1 tablespoon at a time until the glaze reaches desired consistency. Drizzle the cooled muffins with glaze and allow to set.  
  7. Store muffins in the refrigerator up to 3 days or freeze for up to 3 months.
