Orange Granita

Serves: 8

Total time: 3 hours

Ingredients:

  • 4 large oranges, zested, peeled and segmented
  • 1 cup Tropicana orange juice
  • 2 tablespoons granulated sugar
  • ⅛ teaspoon kosher salt
  • Optional: plain Greek yogurt or vanilla ice cream, for serving

Directions:

  1. Grate one orange to equal 1 tablespoon, and set aside. Peel and segment all the oranges and place in a blender. Add the orange juice, sugar and salt and blend until smooth, 1 to 2 minutes. Pour into a shallow pan (a 9x13-inch pan works well), cover and freeze for 30 minutes. Remove pan from freezer, add zest and stir with a fork. Return to the freezer and freeze, scraping the mixture with a fork to break up large pieces every 30 minutes for 3 hours.
  2. Scrape and portion into bowls. Serve over Greek yogurt or vanilla ice cream, if desired.
