Orange Summer Salad

Ingredients:

  • ¾ cup uncooked quinoa
  • 2 cups shredded cabbage
  • ¼ cup fresh cilantro, chopped  
  • 1 cup shredded carrots
  • 1 cup finely chopped broccoli
  • 1 cup diced cucumbers
  • ¼ cup thinly sliced green onion
  • ¼ cup chopped cashews
  • 1 navel orange, peeled, and sliced into wedges

Orange Dressing Ingredients:

  • ½  cup Tropicana Pure Premium® 100% orange juice
  • 2.5 tbsp orange zest (from 1 orange)
  • 2 tbsp Honey
  • 1 tbsp Dijon mustard
  • ½ tsp Salt
  • ¼ tsp black pepper
  • 3 tbsp red wine vinegar

Directions:

  1. Cook the quinoa according to package instructions. Once cooked, set it aside to cool.
  2. Meanwhile, make the orange dressing: whisk together Tropicana® orange juice, orange zest, honey, dijon mustard, salt, black pepper and red wine vinegar until smooth.
  3. In a large serving bowl, combine the cooked quinoa, shredded cabbage, cilantro, shredded carrots, broccoli, cucumbers and green onions. Drizzle with orange dressing and toss to combine. Garnish with chopped cashews and orange slices.

This salad will keep well, covered and refrigerated for about 4 days.
