Sheet Pan OJ French Toast

Serves: 4 (2 slices each)

Ingredients:

  • ⅔ cup milk** of your choice 
  • ⅓ cup Tropicana orange juice 
  • 1 large egg 
  • 1 large egg yolk 
  • 1 teaspoon vanilla extract 
  • 1 tablespoon fresh orange zest (from 1 orange) 
  • 8 pieces whole grain bread, sliced ½-inch thick 
  • 1 tablespoon unsalted butter 
  • Maple syrup, for serving

Directions:

  1. Place a large, rimmed sheet pan on the middle rack of the oven and preheat to 400 degrees F. 
  2. Whisk milk, orange juice, egg, egg yolk, vanilla and orange zest together in a shallow bowl. Add a bread slice to the mixture, let it sit for a few seconds, then flip and let it soak for another few seconds. Allow excess to drip off, then transfer to a plate. Continue with remaining bread slices. 
  3. Remove preheated sheet pan from the oven and add the butter. Carefully tilt the pan (or use a pastry brush) to evenly distribute the butter then add soaked bread slices. Bake 10 minutes, then flip and cook for an additional 6 to 8 minutes, or until other side is golden brown. Serve with maple syrup. 
  4. Tip: Day-old bread works best for this recipe, but you can also oven-dry your slices. Add slices to a large baking sheet lined with parchment. Bake in a 275 degree F oven, flipping once halfway through cooking time, until lightly dry on both sides, about 10 to 12 minutes.
