Tropicana Orange Fried Rice

Ingredients:

  • 3 cups jasmine rice, cooked and cooled 
  • 12 oz frozen mixed vegetables 
  • 3 eggs, beaten and scrambled 
  • 1 cup Tropicana orange juice 
  • ¼ cup soy sauce 
  • 2 tbsp sesame oil 
  • 1 tsp ground ginger 
  • Salt and pepper to taste

Directions:

  1. Cook rice according to package, cool, and set aside.   
  2. While rice is cooling, scramble eggs in a large sauté pan, remove pan and set aside. 
  3. Add frozen vegetables and Tropicana orange juice to the large sauté pan and simmer on medium-high heat. 
  4. Add the cooled rice, soy sauce, sesame oil, and ground ginger to the sauté pan with vegetables and orange juice.  Mix to combine all ingredients. Carefully stir in scrambled eggs. Add salt and pepper to taste and top with green onions.
