Watermelon Salad with Orange Vinaigrette

Ingredients:

  • ¼ cup Tropicana Pure Premium® 100% Orange Juice
  • 2 tablespoons minced shallot
  • 1 teaspoon lime zest and 2 tablespoons lime juice (from 1 lime)
  • 6 cups cubed (¾-inch) seedless watermelon (about 3 ½ pounds)
  • 1 medium jicama, (about 1 ½ pounds), peeled then cut into ½-inch cubes
  • ½ cup fresh mint, thinly sliced

Directions:

  1. Whisk orange juice, shallot, lime zest and lime juice together in a large bowl. Add the watermelon, jicama, and mint and toss gently to combine. Serve immediately.
